No Bake Protein Bites

One of the reasons why I was even open to the concept of supplements is because I’ve almost always used protein powder to supplement my protein. My college roommate and I used to regularly make these protein bites in college and now that I have a full kitchen, I’ve perfected the recipe and I continue to make them often!
They’re an easy & satiating snack for an on-the-go lifestyle! If you hang out with me in person, you’ve probably had them yourself! I hope you enjoy them as much as we do!
Ingredients:
1.5 c rolled oats (I blend mine in the food processor so that it’s smooth oat flour)
½ c of preferred protein powder (We use MRE Lite or Keto//OS Pro)
½ tsp cinnamon
1 tbsp chia seeds
½ c smooth peanut butter (I make my own by blending honey roasted peanuts in the food processor!)
3 tbsp raw honey or maple syrup
1 tsp vanilla extract
⅓ c chocolate chips
2-4 tbsp liquid (water, almond milk, etc.)
Instructions:
Make Peanut Butter: Add 2 canisters of Honey Roasted Peanuts to a food processor and puree. It may take 2 cycles. Pour peanut butter into the peanut canister. This can be stored in the refrigerator or the pantry!
Add oats, protein powder, cinnamon, chia seeds to a large bowl and stir to combine.
Add peanut butter, honey/syrup, and vanilla extract. Stir to combine.
Add in chocolate chips. Mixture should be slightly sticky but still crumbly.
Slowly add in liquid 1 tbsp at a time. It should make a sticky ball that holds together.
Roll into balls using hands.
Place in a container and refrigerator for at least 30 minutes.
Keep in the fridge until ready to enjoy!
